Five of the Best Apples for Baking This Fall

Fall is officially here, and that means one thing in my kitchen: it is apple season.

I will be honest with you. If I walked into a grocery store and needed apples for a recipe, my instinct would be to pick the prettiest ones and call it a day. A beautiful red apple in the cart and off we go. But as it turns out, not all apples are created equal when it comes to baking, and choosing the wrong one can make a real difference in your finished dish.

So I did a little research, and I am sharing what I found right here so you do not have to guess the next time you are standing in the produce aisle.

Five Great Apples for Fall Baking

1. Granny Smith

The Granny Smith is one of the most popular baking apples for good reason. It is tart, tangy, and has a wonderfully firm flesh that holds up beautifully under heat. It is practically the gold standard for apple pie. If you want to soften the tartness a little, try pairing it with a few slices of Honeycrisp in your recipe. The combination is absolutely delicious.

Best for: Pies, crisps, tarts

2. Honeycrisp

One of the sweetest apples around, the Honeycrisp is a Midwestern favorite that works beautifully in baking. It has a distinctive juicy crispness and is firm enough that it will not cook down and turn mushy. It pairs well with just about any other apple variety, making it a fantastic addition to a mixed apple pie. Just keep in mind that Honeycrisps are only available for a few months in the fall, so grab them while you can.

Best for: Pies, tarts, dumplings, bars

3. Gala

With a crisp bite and a mellow natural sweetness, the Gala apple is a wonderfully versatile baker. Because it is naturally sweet you can often get away with using a little less sugar in your recipe. Its crispness also helps it retain its shape during baking so you will not end up with a mushy filling.

Best for: Any recipe, great all-around baking apple

4. Golden Delicious

Do not let the name fool you. The Golden Delicious is much more than a snacking apple. It has a mild, honey-like sweetness and a tender texture that breaks down beautifully in cooked recipes, making it perfect for sauces and cakes where you want a smooth, soft result.

Best for: Sauces, cakes, butter

5. Pink Lady

The Pink Lady is a beautiful apple inside and out. It has a lovely sweet-tart balance and a firm texture that holds up well during baking. It is a great choice for recipes where you want a little complexity in the flavor, and it bakes up with a gorgeous color too.

A Few Apple Baking Tips

Before you head to the store, here are a few simple tips to help you get the most out of your apples this fall:

Mix your varieties. Some of the best pies and crisps are made with a combination of apples. Try pairing a tart Granny Smith with a sweet Honeycrisp for a perfectly balanced filling.

Do not peel until you are ready. Once an apple is peeled and sliced it starts to oxidize and turn brown. Toss your slices in a little lemon juice to keep them looking fresh while you prep the rest of your recipe.

Taste before you adjust. Different apples have different levels of natural sweetness. Taste your apple before adding sugar to your recipe and adjust accordingly. You might need less than you think.

Store them properly. Apples stay fresh much longer in the refrigerator than on the counter. Keep them in the crisper drawer away from other produce to get the most out of them.
